It should ideally not be resetting the throttle - is this something to do with the unity input system or something daft we're resetting?

This is just a missing feature and it makes it difficult to know what assists are on in most contexts.

Multiplayer player count is wrong on server list

_Always_ says 1/16, why is that? Does it even respect the max player count set in the lobby by the host?
