I think I was able to work around this by setting `nginx_webroot_create: False`
The icons were not displaying correctly for me with this patch alone on Ubuntu 25.04 with GNOME Shell 48 Beta. #564 has a more complete fix that fixed that issue...
I confirm that with this patch, the appindicator extension works in both Debian Trixie with GNOME Shell 47 and Ubuntu 25.04 with GNOME Shell 48 Beta.

We applied swick's version of this pull request in Ubuntu 25.04 (plucky-proposed) but the webextension tests are [unreliable](https://autopkgtest.ubuntu.com/packages/x/xdg-desktop-portal/plucky/ppc64el) in our infrastructure.
GTK has [closed](https://gitlab.gnome.org/GNOME/gtk/-/issues/6958) the bug saying that it needs to be fixed in waybar. Note that the change that triggered this issue hasn't yet made it into a stable gtk3...
You might want to pull from master instead of ubuntu/mantic since I recently [updated](e2615d148520ca15705963138368407f2fa4b69a) Yaru to fix installing the theme for gedit >= 45.
