/triage accepted I guess this is, because we don't set the target platform via [quarkus.jib.platform](https://quarkus.io/guides/container-image#quarkus-container-image-jib_quarkus-jib-platforms) for the quarkus builds [eventing-integrations](https://github.com/knative-extensions/eventing-integrations/blob/5612da473ede631d1741ed6f2dce862e401bbf91/pom.xml#L172-L180) and thus it defaults to amd64. @matzew @christophd
