It has just been [published](https://hub.docker.com/r/sj26/mailcatcher/) a few days ago, but it's not yet listed as "official image" on [Dockerhub](https://hub.docker.com/search/?isOfficial=1&q=mailcatcher) and [Docker Store](https://store.docker.com/search?q=mailcatcher&source=verified&type=image).

I think it's easier if you just mount your custom configuration to `/usr/local/etc/php-fpm.d/`. This is more generic and works for any config.
