Probably because muvm doesn't support Wayland passthrough at the moment. You can try building native arm64ec/wow64 wine and running it without muvm (possible on 16K since 10.5 release)
Looks like a GNOME Wayland HiDPI scaling issue. Use integer scaling (2x) instead of fractional. macOS does same thing (2880x1800 on 2560x1600 screen).
