Correct, p2pool doesn't offer M1 binaries yet.
Qt only added official M1 support in 5.15.9: https://www.qt.io/blog/commercial-lts-qt-5.15.9-released This version won't be available open source until April 2023. It might be possible to get it working with previous versions...
The GUI downloads the p2pool binary in the same directory as the monero-wallet-gui binary. I can imagine that package managers don't like this, as it's not the proper way to...
Basically two options: 1) Disable during compile time 2) Install p2pool together with monero-wallet-gui, assuming everything was tested and works correctly
One more thing to consider, inside the `model` folder there are some that are related to libwallet and some aren't. I don't know how to split these up.
I don't know how you want to organize things so I can't really say at this point. Maybe you can make an overview?
Can you go to Settings -> Info and post: - Version - Wallet mode
