Try `mount_apfs -s orig-fs / /mnt`?
If the `mount_apfs` works, then it's because you haven't signed `snaputil` with custom entitlements. See [issue 2](https://github.com/ahl/apfs/issues/2) for more details. Remember to disable SIP and AMFI.
