Wouldn't adding 0.0.0.0 in /etc/hosts cause problems? It's the broadcast address, so I'd think there'd be a danger of having _everything_ redirect to my_wp_site.dev?

In production, absolutely. However, I'm not considering docker-wordpress to be a production-ready project. It's basically an easy-to-understand demonstration of Docker and so I think it's important to have mysql/wp data...
