You're getting reconnected because the advertising was automatically started after disconnect. You'll want to change that setting to prevent that.

Sorry, the answer here is to advertise with a whitelist so that only bonded peers can connect. Entering "pairing mode" would be advertising without the whitelist.

I'm not sure what you mean, does the PC not see the advertisements from the ESP32?

I would need to see the logs from the esp32 at debug level to provide much insight with this.

I believe this to be related to bluetooth classic, not this repo. please reopen if still having this issue.

Please see the examples in the nimble-arduino library for BT5. You will need to enable extended advertising in the config.
