I was clarifying in case you were filtering specifically for SAM. Steam's network protocol is encrypted, so it wouldn't be obvious plaintext.
Steam uses multiple protocols, the main one is not HTTPS and is custom.
I'd recommend taking a look at [SteamKit](https://github.com/SteamRE/SteamKit). I don't have much direct experience with Steam's network protocols as I've never had a need to dig into it in that depth.

SAM predates the Linux version of Steam and was never intended to interact with it, sorry.
I would say it's unlikely, but in the end it's up to the people handling the game if it notices a discrepancy or not and decides to take action.
You don't need to build the source code yourself. Grab [the latest release](https://github.com/gibbed/SteamAchievementManager/releases/latest). Not sure why you're having issues building, that's a pretty weird error.
SAM doesn't make any attempt to disguise itself, if Valve really wanted to detect it, they absolutely could. I don't think they care, however. As far as community being able...
Some games also internally use stats as part of recording achievement progress, so if people are able to see those, they could verify against that as well.
