This is not really the issue for jupyterWith but a general Nix issue.

For next version of jupyterWith (see `main` branch) we have on our roadmap to get better support (or at least document what doesn't work) for MacOS.

As we are working on a flake version of this repository with an improved API we add to the roadmap to document this use case.
