Not ideal, but there are programs to minimize programs to tray. Personally I use AquaSnap, but a free alternative is RBTray. Definitely echoing the request for a native option however....

You're not alone, it does the same for me. Weirdly enough if I were to bind it to alt (for example) it doesn't do this, it's specifically the windows key....
