Because attributes are taxonomies and create automatically. You should add attribute term taxonomy to config for translation.
Did You select an option for deleting translation during uninstall?
Hi. "wpm_each" using for translating multitlingual arrays in database. You have to know how fields saved in database.
If it is text field type, then it translating by default.

I tested my plugin with last version Gutenberg and all are working fine.
