@krassowski pointed out that https://github.com/jupyterlab/jupyterlab/issues/10791 provides info about applying "undo" and "redo" to individual cells' contents. Does this address your issue?

There are many existing tools that can run all cells in a notebook, like [Papermill](https://papermill.readthedocs.io/en/latest/). Keeping this issue open as an enhancement for JupyterLab Desktop to have a similar option.
