yes as long as you keep the connection continuous there is no limit to the frequency at which you can run commands.

I'll still leave this open in case the work around I was thinking of is valid

This is planned but not at all in this way. Having mutiple "custom" options is just a bad UI/UX implementation. The way it'll work is you can add named offsets...

No plan to support multiple clients for performance reasons. Future versions will allow multiple sinks per stream anyway so you'll be able to add a second network sink as needed.
