I came here to report the same issue with regular switch pros and NSO N64 controllers. In my case, I can not get the subsequent controllers to work at all...

I asked Darthcloud on Discord a few weeks ago about debugging this issue and apparently it is non-trivial. The only workaround is to have individual adapters for each controller.
