We have found and fixed in v5.0.1 a bug which can be causing similar problems, so I am closing this issue for now.
I think we have found and fixed the root cause of the problem. Please try the apk in version 5.0.4 which I just released.

Signing of the Windows installer is fixed in the latest 5.0.5 version.
Thumbs are generated from MP4 in the latest version 5.1. It can always happen that electron/chrome can not open a certain mp4 because of many reasons... -> closing
The "apply color changes to all tags on the groups" checkbox works as expected and changes the color of all tags in the group -> closing
