Closing this PR because the build is no longer working.

This was an early investigation into the use of `pyproject.toml` for PL installation. This PR will be closed for now, but can be revisited when PennyLane is made PEP 517...

Hi @erick-alt-delete! What is the status of this PR? Given that the PL docker support is not that well maintained, I don't think it's a big priority to add this....
