It would appear that it only shows a portion of the full disk and cuts off the rest, makes the image look rather odd, but it's normal behavior: https://www.goes-r.gov/imagesContent/users/products/GOES-16-Cloud-Top-Temperature.jpg
I'll have to take a look at it, IIRC the background color is dependent on the product, some products choose the lowest value for pixels without data, while others use...
The map overlay isn't off, those products only work over a range of satellite zenith angles. Basically, the algorithm that derives those products doesn't work if the satellite is too...
