I had exactly the same problem. My Server was behind a NAT so I had to add to the server the public ip address to the same interface. see https://github.com/alangecker/bigbluebutton-docker/blob/v2.2.x/docs/behind-nat.md

I'm currently having the same problem (for about 2 weeks). I found out that firefox works like charm but chrome/chromium/new edge/brave get ICE 1007 when connection audio (or mic).

I tried now for a few days some proxy flags as you tried to guide me with the link. But there i nether found a documented solution for the error...

As posted in #89 a complete reinstallation doesn't resolve this issue. I assume #89 and this one have the same root cause.
