Use SOFA_ROOT naming convention everywhere in the docs

The following page for Linux installation using runSofa command: https://sofapython3.readthedocs.io/en/latest/content/Installation.html#using-python3 uses <SOFA_build> instead of <SOFA_ROOT>/build which could be used everywhere in the docs I added a simple script instead of wordy instructions.
