mint_nft.sh baseDir=dirname "$0" doesn't run on ubuntu 20

replaced baseDir=dirname "$0" with baseDir=$(dirname $0) in scripts/mint_nft.sh to work in bash on ubuntu 20. I can submit a pull request if this looks ok
