On the boot ups where it doesn't show, does anything show in i2cdetect -y 1 ? It's almost like it's booting up too fast for the DAC to power up...

Interesting that they are running a custom kernel. Doubt that's the issue but still. It looks like they're also using the software i2c controller, forcing the vc4 audio off and...

This uses the wm8960. Don't know if it's wired up the same as the waveshare version in #264 but it might work following the same process.
