You've probably enabled one of the unsupported notifications triggers inside of Sonarr/Radarr. My initial guess would be that you have grab/health/app update enabled.

What is the point of doing localhost bindings?

You can always access docker networks from the host even when there are no bindings. As you have access to the internal networking.
