The default setting of QF will regard any line with (at least) two hyphens as a signature separator, which—as you already found—may be a bit too liberal for some e-mails....
@alvarnell you're quite right. However, the number of people that actually know (and therefore _use_) that construct is, sadly, pretty small.

Can you provide a bit more information? I don't see any trailing whitespace when using `${message.from}` myself, so it may be a specific use that could be causing the problem...

@gravesit sounds like #31 is causing more problems than just with the custom signature separator, so I'll look at that ASAP.
I'm not running High Sierra anymore, but I used QF myself on it extensively, and it worked acceptably. Not sure why specifically the quote fixing isn't working.
Yes, I believe this is a known issue with Catalina (and probably Big Sur). I'm still running Mojave so can't debug or fix :(
