The topic only becomes visible once the tablet sends something. Activate the sensors and wait for 60+ seconds. You could also have a look at the android logcat, maybe there...
For mqtt settings it should be disable and re-enable mqtt to make sure it reconnects. Let me know if that's not enough and I check out again ;)
