Enhance documentation for customized pipeline creation

When calling nf-core create the process can be customized interactively or using a template file. I feel like the template documentation could be enhanced. In particular, it's not very clear what effect the keys specified under skip have exactly. Similarly, it's not clear for what purposes the prefix will be used.
