modules Update containers to 2.7.1

This pull request updates the containers to version 2.7.1, which enables the pod5 file support. Additionally, the maintainers list has been updated to include "@eperezme".

@eperezme are you planning to work on this one? :)

We are doing some nf-core cleaning and plan to close PRs that nobody works on anymore by the end of this week. They can then be reopened in the future if needed.
