Solution for me was to uninstall BeatSaber and delete all the remaining files in the install directory, reinstalling the game and everything worked fine!

Yeah I agree it seems to be AMD related, sadly I don't have an AMD GPU, only someone with an AMD GPU will be able to debug this ;(
