borgmatic_hooks compatibility with string hooks

Some **very useful monitoring hooks** (like "healthchecks") are defined with a [simple string](https://projects.torsion.org/borgmatic-collective/borgmatic/src/commit/413a079f5125be900f768dd67ab6bbb7427361b9/borgmatic/config/schema.yaml#L884). The [current template](https://github.com/borgbase/ansible-role-borgbackup/blob/740e9fe758705b15beb9c25271ba226186c5d575/templates/config.yaml.j2#L181) is not compatible.

IMHO the image should not contain the Nginx service. It should be eventually defined with an extra service on docker-compose.yml or removed entirely. For example, similar result could be obtained...
