Consider integrating with meteor-roles?

It would be really cool to be able to create specific permissions with this, and then group them into roles under meteor-roles.

You don't need meteor-roles, I guess, just roles in general. I'd be down to help. Having an admin role instead of just a single admin user would be great for startups, where the founding team needs to all have those capabilities

I agree that would be a good thing. (I didn't initially include roles because it wasn't needed for the projects where I'm currently using this.) Feel free to have a go at it, and then issue a pull request.
