Change NixOS guide to use programs.zsh.ohMyZsh.custom option for changing the zsh_custom var

Upstream tracking isn't syncing to latest Altserver version

The newest update is 1.7.2, but this project is only tracking to 1.5. Is this intentional, as I thought it should automatically sync upstream.
