It seems that `ESMF` has options to specify `src_mask_values` and `dst_mask_values` but I don't see these in the xESMF source code at the moment. The ESMF docs show a usage...
Xarray uses `np.nan` as its missing value flag. I'm thinking ESMF is not handling this as expected in some cases (conservative regridding). Perhaps we just need to make some changes...
