Not sure how to, because there is nothing in the UI that allows me to log out / log back in:  I tried restarting the app / rebooting, but...

I did, but for whatever reason that fixed it now. Only difference is that I was working from home yesterday when I tried that.

I am not sure if I understand what you mean.

this integration doesn't support yaml config - home assistant is moving away from that and going fully UI based using the 'Integrations' menu.

you can edit the files in the .storage hidden folder at your own risk
