Did any of you find a solution to easily format readonly JSONFields ?

You're right, it covers 80% of the use-cases, but fails on some specific stuff. I'm making it slowly grow, with tests, I'll see what to do when it becomes un-manageable...
There is also a similar issue #8338 where the idea would be to do seperate CSV/JSONL exports for obsolete products, as they are stored in a seperate database
Solving this issue would be valuable for the open-prices project ! We would like to sync obsolete products, they don't appear in the current JSONL exports. https://github.com/openfoodfacts/open-prices/issues/281
