Also make sure you didn't click inside the console window, because then it freezes and doesn't receive requests properly.

Can confirm this is indeed the case. Copy-pasting it into the right place manually solved the issue for me.

Not sure if newer servers (and their data) are backwards compatible with older clients. So you possibly would not only need to change the genshin client, but also the server.
