I fixed it. You need to add STEAM_GAMESCOPE_VRR_SUPPORTED=1 to the gamescope session script and then enable VRR in the QAM.

Now I'm running into an issue where VRR doesn't work properly when HDR is enabled. It bounces all over the place even when the framerate is steady.
Just an FYI, I see the xprops segfaults in dmesg on my fully working system, 6700xt/10700k. You might try updating to gamescope-git and mesa-git. You can do this by running...
