[Docs]: Update Lingo.dev Documentation to Replace Deprecated Gemini 1.5 Models

Good catch! The documentation definitely needs updating since those Gemini 1.5 models are deprecated. Updating the config examples to the latest supported models will prevent confusion for new users.
