Remove ViaRewind, does the issue still happen?
Please provide a ViaVersion dump using /viaversion dump in your console or ingame.
If you are on fabric, run /viafabric dump

Can you try if this issue also appears when using the ViaProxy?
I don't really know whether your goal is to only remove the background appearing when opening screens ingame (which would be done by removing the super.render in the render method...
I am not sure if it's possible to open ImGui without having a minecraft screen as backend, at least not if you want proper mouse interactions.
This _should_ work, although I don't see why you would want that since you can't interact with it in game.
How does the Gizmo of the world looks like? I'm curious
