Catch2 is no longer a single header file and catch2 v3 has switched to a statically compiled library

[doctest/doctest](https://github.com/doctest/doctest) is another alternative, that's keep the catch2 api and still be header only.

The current Catch2 header files in the starter repos do not work with Ubuntu 22.04 LTS

20.04 is LTS and what worked last year. In 22.04 fails with the latest gcc.

New jekyll version incompatible
