I've just started a new build and having this same issue. Do blocks have to be registered differently in order to appear here? Only seeing the Core blocks.
On further investigation, this works in WP 5.5.3 but not on any higher version of WP core. After 5.5.3, the ACF blocks are not populated in GraphQL.
Sorry for the delay in weighing in on this, there are a few competing approaches here. - Leverage the WP comment system and use a graphql mutation to add them....
I'll start this and get a v0.1 ready.
I know I've fallen behind on this. Good news is that GraphiQL is now built into WPGraphQL, so actually this is currently one module and one piece of meta-data.

I don't know if this belongs in this issue but it would be good to have everything required for webmentions leveraging of microformats in here.
