This is caused by the latest changes in Pomelo, see issue [here](https://github.com/PomeloFoundation/Pomelo.EntityFrameworkCore.MySql/issues/1903). tagging @sfmskywalker for visibility

Worth mentioning, that if you downgrade Pomelo to 7.0.0 (you'll also need to be running on .Net 7) the issue goes away. Maybe worth waiting until they patch it on...

I think this is a bug in the latest version, in that setting the property doesn't seem to have any effect
