Update here ... we're close to merging in Realtime v2 which supports multiple Postgres servers each as it's own `tenant`.

Quick update on this, yeah this is something we could do with column level security baked into Postgres. We're close to releasing the latest version of Realtime. Once we've merged...

This is a great idea and with Realtime v2 we have an extensions concept where we could additionally insert your realtime feed into another database.
