I had the same problem. Edit the AndroidManifest.xml file as you want (name of the app... etc) and then copy all the files in qgroundcontrol/android folder to the C:\source\QGC\build-qgroundcontrol-Android_Qt_6_6_2_Clang_arm64_v8a-Debug\ANDROID_PACKAGE_SOURCE_DIR folder...
