It looks like FFMPEG can "remove" subtitles, or at least re-encode without them. I could try that en-masse (not ideal but whatevs). Maybe it can also stream without subtitles? https://superuser.com/questions/1574967/remove-embedded-subtitle-streams-from-media-file-without-streaming-remuxing

Thanks for the info. Let me put it this way - I have to disable subtitles every single time I play any single video. Subtitles should be opt-in, not opt-out....
