Sorry should have put the link in my comments. I meant the new update, version 189 of Fan Control, should address your issue.
How exactly? This issue may be specific to you, you need to provide some details. Does the app crashes? Does it keeps open but fails to detect sensors? etc etc....
Under which user is it running? Is it a different user from your usual one?
Also, in the meantime, give https://github.com/Rem0o/FanControl.ADLX a go. Untick the GPU section in sensor settings, and keep ADLX.
