It has a datasheet: https://mm.digikey.com/Volume0/opasdata/d220001/medias/docus/4887/PST360G2-1S-C0000-ERA360-05K.pdf I was wrong. It takes a 14mm rotor. We can attach a gear from the steering column.

Instead of using a steering angle sensor, we can use a gyroscope integrated into the steering wheel and some trigonometry to calculate the rotary angle on the plane in a 3D space.

@qmascarenhas, please review this proposal again and incorporate it into the design of the steering wheel.
