I added the `plotRGB` mention in the second chapter - https://github.com/Robinlovelace/geocompr/commit/f3ccb9742f984f88f0112fc3c32010cae0027251. I also will try to add an example of `tm_rgb()` in chapter 8 sometime in the future.
