You need to open the config menu (L, DPAD DOWN and MINUS) and map the controller as no default values are set.
When I grabbed the newest nightly from github, I had no issues at all. Try to use a fresh SD Card (or the WUPS plugin)
The problem is probably using the web exploit, did you try to use haxchi?
HID to VPAD only works on Wii U homebrew, when you load Wii VC, the console switches to the Wii mode (Which unloads all Wii U homebrew)
Are you using the newest nightly and the homebrew launcher 1.4?
Not planned for the near future, but I maybe have time to implement it somewhere in the future. For hori switch controller I would need the controller myself for testing...

The newest version has more checks while parsing config files. At this shouldn't crash anymore with "faulty" files. Can you confirm it?
Probably the GC-Adapter only register itself to our HIDClient, not the SSBU one. Need to look deeper in it.
I could add padcon to HID to VPAD, that wouldn't be a problem. Now with Settings we would also have an easy way to enable/disable the feature
