pak::pak() doesn't have a way to pass arbitrary environment variables

Some packages have build-time options passed by environment variables, e.g. package V8:  On Archlinux, compiling libv8 is bit bothersome with build deps on python2 etc... so setting ` DOWNLOAD_STATIC_V8=1`...

I implemented a proof of concept to invert colors in the plot to have a consistent dark-mode experience. This can be toggled on/off with a left click on the plot...
